Nutrition counseling services are available to all SU students, staff and faculty. There is no charge and all counseling is confidential.

Vegetarian & Vegan Dining
The vegan/vegetarian population at SU is growing. In response to this growth, UDS is increasing the dining options available to the vegans and vegetarians we serve. Let's take a tour of the Commons Marketplace from a vegan/vegetarian perspective.
Simply Fine
Serves vegan and vegetarian dishes for lunch and dinner daily.Pasta
Includes among its daily menu items, a vegan marinara sauce and vegetarian alfredo sauce.The Wok
A very popular kiosk with vegetarian students. Here you can have a stir-fry cooked to order while you wait. The Wok offers a wide selection of fresh vegetables along with tofu as a protein source.Sabrosa
Serving up Burritos, Bowls and Tacos, Sabrosa offers vegetarian beans and white rice daily along with guacamole, cheeses and salsas.Grillers
Check our rotating menu for plant-based nuggets, mozzarella sticks, corn nuggets, fry of the day and much more.Pizza
Cheese pizza is served daily while other vegetarian favorites such as Broccoli Alfredo and Mac ‘n Cheese Pizza are on the menu. Bread sticks with dipping sauces and calzones are also on the menu. Vegan cheese is also available – call ahead (410)-548-5598 and skip the wait for gluten free and/or vegan cheese.Deli and Soups
Vegetarian or vegan soups are served daily. Looking for a burger? (Vegetarian of course!) Head to the Deli where vegetarian and vegan burgers are available as requested or build your favorite sandwich, quesadilla, or have a grilled cheese.Breakfast
Of course we have eggs, many ways, also check out the hot cereals, yogurt bar, and dairy free milks for cereals. You can even make your own Belgian waffle or try our Popcake™ cooked to order pancakes.Also Look For...
Fresh fruit and crisp veggies always available at the salad bar. Thirsty? Soy and almond milk are always available, along with fruit juice, condiments and more.We try to make it as easy as possible for our vegan and vegetarian students to enjoy healthy meals. Food Allergies and Intolerances
Stay Safe and Eat Well
Salisbury University Dining Services recognizes that some students have one or more food allergies or intolerances that require them to carefully manage their diets. Students with special requests are strongly encouraged to make us aware of these needs as early as possible. We make every effort to provide helpful information to our campus community. Our chefs, managers and dietitian are available to work with individual students to determine the dining strategy that best meets your personal needs. Our goal is to provide each student with the resources needed to successfully manage their food allergies and enjoy their dining experience.
Menus and Labeling
Menus are posted on our website with nutrition label information provided for each menu item. To ease your search for allergen friendly foods, use the filtering feature which allows you to filter for any allergen or ingredient. For example, see all foods that do not contain wheat.
We do offer Honey Nut Cheerios, almond milk and individual containers of peanut butter. When nuts are used it is clearly marked as an allergen on our menu webpage.
Gluten Friendly Dining
At UDS we try to make it as easy as possible to manage gluten intolerances. Let’s take a tour of Commons Dining from a gluten sensitive perspective.
Bistro
This is where you will find a refrigerator with specialty items for those managing allergies. It is stocked with gluten-free bagels, muffins, bread, rolls and wraps. Please note that not all items are top 9 allergen-free. For example, gluten-free items may contain eggs or soy. Other items, such as dressings or condiments, may also be stored here.Grill & Deli
Looking for a burger? Gluten free rolls and bread are available here. A gluten-free only toaster is available at the Deli.Pasta
Gluten friendly marinara and alfredo sauce are served daily. Gluten free pasta is available upon request.
Pizza
Gluten free pizza crust is available. It is cooked on a clean, gluten free surface to avoid cross contact while cooking.Simply Fine
Our allergen and gluten friendly location. Here you will find simply prepared whole foods as well as a vegetarian selections.
Sabrosa
Serving up burritos, bowls and tacos, Sabrosa offers gluten friendly proteins, corn tortilla’s and rice bowls made to order.Wok
Build your own stir fry. Rice and gluten free tamari are offered here however we do not offer a gluten free wok for cooking. This area may be appropriate for gluten sensitive guests but not for those that need to be 100% gluten free as in celiac disease.We try to make it as easy as possible for our gluten sensitive and allergy students to enjoy fun, healthy meals. Salisbury University Dining Services does our best to accommodate the dining needs of our customers. We make every effort to identify potential allergens in our menus. Food production staff are instructed on the severity of food allergies and proper technique to avoid cross contact.For items labeled gluten-friendly, the manufacturer ingredient labels have been reviewed and some do not contain a certified gluten-free seal. We identify top allergens in our foods and offer gluten friendly options, but we cannot guarantee food items will be 100% free of incidental contact with gluten or allergens. Allergen information provided on our website is based on information from our suppliers. There is the possibility that manufacturers of the foods we use could change the formulation or substitute at any time, without notice. Smart Choice
At Salisbury Dining Services we offer a variety of foods; some are nourishing choices while some are high in fat and sugar. It’s important to remember that all foods can fit into a healthy lifestyle when there is balance, moderation and a focus on consuming a variety of foods including an assortment of colorful vegetables and fruits.
To make finding nutritious foods easier we have developed the Smart Choice program. These dishes contain beneficial nutrients that support our minds and bodies and are low in nutrients many Americans need to avoid or eat less of. They are also free of additives on Center for Science in the Public Interests “avoid” list.
Smart Choices are low in saturated fat, moderate in sodium and added sugar and/or contain one or more beneficial ingredients. These include healthy fats such as those found in olives, olive oil, avocado, salmon and seeds and phytonutrients, also called phytochemicals or bioactives, that are found in plant foods.
